Spaghetti with Broccoli Florets and Fresh Tomatoes
1 head broccoli Florets and some stems cut into 1 inch pieces
3 cloves garlic finely chopped
12 ounces wheat pasta spaghetti
½ cup chopped parsley
4 roma tomatoes chopped into 1/2 inch pieces
½ onion chopped
¼ cup tomato puree
2 red whole chilis
Cook the wheat pasta according to directions.
In a large pan, heat EV olive oil. Add the onions, and garlic and saute well. Then add the broccoli and cook with 1/4 cup of water for 3 to 4 minutes till cooked.
Add the tomatoes, tomato puree and parsley and saute everything for another 5 minutes.
Mix in the pasta and heat thoroughly.
Optional : Top with parmesan cheese while serving.
