Chickpea Party!

3 cups cooked chickpeas ( strain and boil)

  • 6 oz. organic Broccoli Slaw

  • 4 oz. shredded carrots

  • 2 tbsp of lemon juice

  • 4 garlic cloves

  • 2 slices of ginger

  • ½ serrano pepper optional

  • 1 cup chopped parsley

  • 1 onion chopped

  • 1 tbsp. Olive oil

  • Salt pepper to taste

  • Grated coconut for garnish (optional)

  1. In a large pan heat 1 tbsp. olive oil. Add broccoli slaw and shredded carrots and saute for 2 to 3 minutes till crisp.

  2. Add cooked chickpeas and saute for another 3-5 minutes. Transfer to a large bowl and add salt and pepper to taste.

  3. Add finely chopped parsley, garlic, ginger, lemon juice, serrano pepper and onion in a food processor or veggie chopper and pulse for 30 seconds.

  4. Now mix ingredients in large bowl and garnish with grated coconut.
