Rice sticks (Vermicilli) w/ nuts
- 1 cup vermicelli
- 2 tablespoons olive oil
- 1 1/4 cups hot water
- ½ teaspoon cumin seeds
- ½ teaspoon uradh dhal
- ½ teaspoon mustard seeds
- 1 serrano pepper cut in half
- Half onion finely chopped
- 1 teaspoon ginger
- 1 finely chopped tomato
- 5 to 6 curry leaves
- 1 cup roasted peanuts
- Lime
- Coriander leaves
- Use a non stick pan. Add some oil, and when it gets hot add the seasoning: cumin seeds, mustard and uradh dhal
- When it splutters add the onions, chili and curry leaves. Saute for 3-4 minutes.
- Add the vermicelli and roast for 2 to 3 minutes, till it is coated in oil. Add some salt to taste.
- Add 1 1/4 cups boiling water to the vermicelli, mix and cook for for 4 to 5 minutes till vermicelli is cooked well.
- Cover and let it stay for 5 minutes.
- Add roasted peanuts, coriander leaves and grated coconut to garnish.
