Tomato Rice

Tomato Rice

  • 1 ½ cups cooked basmati rice
  • 4 roma tomatoes finely chopped (microwave for 1 minute until soft)
  • 1 onion finely chopped
  • 1 bay leaf
  • 3 cloves
  • 3 cardamom
  • 1 stick cinnamon
  • 1 tsp. Turmeric powder
  • 2 tsps. coriander powder
  • ½ tsp. chilli powder
  • ½ cup chopped fresh mint
  • 1 tbsp. ginger, garlic paste
  • 1 teaspoon garam masala powder
  • 1 tbsp. cilantro finely chopped
  • 2 tbsp. olive oil
  1. Cook rice (1.5 cups of rice to 3 cups of water) in a separate bowl
  2. In a large pan add 2 tbsp. olive oil.  Add in the following spices: cloves, cardamom, bay leaf, cinnamon.
  3. After 1-2 minutes add the chopped onions and saute until it turns golden brown, then add the ginger garlic paste and cook for 3-4 minutes.
  4. Now add the cooked tomatoes with the turmeric powder, chili powder and coriander powder and saute for about 10 minutes until everything is well combined and cooked.  
  5. Now add the mint and cook for another 5 minutes.
  6. Mix the rice well in the tomato mixture.
  7. Finally add some cilantro and serve.
